Great book for learning how to make great pizza and different types of dough. Worth it no question.

Only drawbacks are it does not have a Chicago Deep Dish recipe. Actually not a problem as Emeril has a good one on the web. Also and it is probably my tastes, some of the toppings are a little "over the top" but then I am kind of a traditionalist.

Pro's, follow the directions and if you do, you will be rewarded with pizza to remember. I got the book for the different dough recipe's and it delivers. Also the prep work and the hows and why's of doing things are great. Their tip's about using an oven and broiler together are a good idea. I did not know that a pizza steel can be better than a pizza stone, I since got a 30lb baking steel for oven pizza. I also have a pizza oven and again, they explain using ovens well.

You must read about the different kinds of dough you will be making and how to make them. (at start of each type of pizza chapter) Do follow the directions.

I'm a huge King Arthur fan from their flours and other ingredients to tools and books. This book is a lovely addition to my collection. There are several varieties of crusts to make with different topping combos for each. I'm a huge fan of the weeknight Detroit style which is easy and delicious (pics included), and I love the new American style too. The photos are greatly appreciated, the instructions are clear. Would make a great gift along with a pan or stone to go with.
