Biographical Note:
Martha Elena García y Guillermo Bermúdez tienen una sólida trayectoria como periodistas de investigación y divulgadores de ciencia y cultura, especializados en temas de alimentación. Han publicado en las revistas I nformación Científica y Tecnológica, Quo, ¿Cómo Ves?, Razón y Palabra e Interdisciplina. Además, son guionistas del programa En Defensa del Consumidor en el portal de noticias SinEmbargo.

Han publicado los libros El taco nuestro de cada día, Alimentos sustentables a la carta y Alimentarnos con dudas disfrazadas de ciencia. Además, son colaboradores eventuales del suplemento La Jornada del Campo, donde han coeditado números relacionados con alimentos nativos como el amaranto, los jitomates y los quelites, salud alimentaria, agroecología, defensa de semillas, huertos educativos, lactancia materna y proyectos alternativos.

Desde 2010, realizan trabajo comunitario en un huerto con mujeres de escasos recursos económicos en Calimaya, Estado de México, donde producen alimentos para el autoconsumo y plantas medicinales para la elaboración de productos fitoterapéuticos.

Actualmente, desarrollan un proyecto para el rescate de jitomates ancestrales en colaboración con la UAEMex, colaboran con la organización El Poder del Consumidor, forman parte de la Alianza por la Salud Alimentaria y son miembros de la Sociedad Mexicana para la Divulgación de la Ciencia y la Técnica.

But in recent decades, our diet has been distorted by the industrialization of agriculture and the production increase and consumer growth of ultra-processed edibles and sugary drinks. That has taken us further away from our dietary roots, leaving us at the mercy of agrotoxins and nefarious ingredients that lead to obesity, diabetes, and other diseases.

Under such a scenario, this book attempts to vindicate the main ingredients Mexico contributed to tables around the world, now a substantial part of every continent's gastronomy. Why tell their story and their protagonism in other cuisines?
