Joyce is a board-certified ophthalmologist from Vancouver, WA. She is a plant-based health enthusiast who has led a wide variety of community-based health programs. Her passion is to help her patients make the paradigm shifts needed to change behaviors and to improve their quality of life. Her own health journey led to an in-depth search for answers and caused her to see the need for information and education about the growing problem of gut permeability and the amazing possibilities for improved health that a specific plant-based lifestyle can give.

Mercy suffered many years with severe anemia, pain and fatigue, before learning about how food sensitivities and gut permeability contributed to her symptoms. Driven by her own struggles with her health, Mercy started creating the recipes which are now the basis of this cookbook. Inspired by her recovery, she set out to help others facing similar health conditions. In 2013, she and her husband moved to Central California where they began the Years Restored Lifestyle and Learning Center. Here, she provides education in nutrition, lifestyle, and natural remedies to help others with autoimmune, food sensitivities and other chronic diseases regain their health and purpose in life.
